A madeleine, oh oui-oui!
One of the favorite goodies of the French is the madeleine. This recipe is our favorite and we eat them often. (Maybe a little too often... but they are just too good! We can't help it.) These are definitely the favorite of our family, no questions asked!
Our French madeleine recipe.
(Makes 12.)
Ingredients:
100 grams of flour.
3g of baking powder.
100 grams of butter, melted.
1/4 of a lemon.
2 eggs.
100 grams of sugar.
Preparation:
1. In a bowl, beat the eggs and sugar together until they are well mixed.
2. Add the flour and baking powder. If the mixture becomes too dry, hold off on the flour and go to step 3.
3. Slowly melt the butter until it is soft enough to mix it in with the flour.
4. If any flour is left over from step no.2, add it now.
5. Add in the lemon juice.
Note: If you do not like lemon, you can replace it with a teaspoon of vanilla extract. (Personally, I add the
vanilla instead of the lemon!)
6. Preheat the oven to 220C.
7. Butter the bottom of the pan. (The pan should have sea-shells molds.) Then fill 2/3 of each individual mold.
8. Place in oven, be VERY careful as they will cook quickly. Takes about ten minutes to cook, but the time really
depends on your oven.
9. Carefully take the madeleines our of their molds while they still are warm. Serve either hot or cold. They are delicious
either way!
I do have a few recommendations for this particular goodie.
- I guarantee you that they will be eaten quickly. 12 madeleines is not much especially when there are more than a couple people. For my family, I usually double the recipe and there's only 3 of us!
- Be creative with them! Madeleines can be eaten with just about anything. Try whipped cream. Dip them in chocolate, or caramel, or spread some jam on them! You could even roll them in nuts after you've dipped them in chocolate or caramel.
- You can keep them in an air tight container for several days, so don't worry if you have some leftovers.
- Be creative with them! Once they're out of the oven, you can dip them in melted chocolate, hot fudge, or warm caramel. You can cover them or dip them in whipped cream. Let your creative mind go wild!
- One of our favorite things to do is take chocolate chips and place them in the batter once the batter is in the molds. Two usually will do the trick. Make sure that you don't push them in too far, but that they are pushed in far enough to actually be in the middle.
- And of course, don't forget to enjoy them. They really are an experience apart from other goodies.
